A simple mix of ingredients you already know–brie, garlic, tomatoes, and basil–but cooked in a cast iron (or over a campfire, if you’ve got one handy!) and served with toasted crostini for a splendidly savory appetizer.

 

Can brie cheese be cooked?

Brie’s mild, creamy flavor is usually sliced at room temperature and served on crackers. But this favored cheese also lends itself to baking. Because brie is generally encapsulated with a rind, it can be quickly cooked on a sheet pan, ceramic bakeware, or cast iron. Once baked, the interior cheese gets melty and gooey, and the flavor is enhanced. To bake brie, cook in an oven preheated to 350ºF for 5-7 minutes.

Should you cut the rind off before baking brie?

There is no need to remove the rind before baking brie. The skin helps hold the cheese in place, making it easier to serve. While other cheeses are prepared without the rind, brie is soft with a moldy exterior and best served with a creamy interior for a deliciously flavorful experience.

Can cast iron be safely used over a campfire?

Yes! Cast iron is versatile cookware and can be safely used on a stovetop, in an oven, and can also be used over a campfire. While cast iron can be placed over an open flame, cooking over hot embers or coal offers the most consistent cooking experience. For this recipe, if cooking with a campfire, we recommend placing the cast iron atop red coals and covering the pan with a lid to ensure even heating without the bottom burning. As always, the pan will get hot, so always transfer it on and off heat sources with a heat-safe oven mitten.

ingredients

  • 1 round of brie cheese (in rind)
  • 1-pint cherry tomatoes, some quartered or halved
  • 1/4 cup olive oil
  • 3 cloves garlic, finely chopped
  • 1/4 cup balsamic glaze
  • 1/2 cup fresh basil
  • 1 baguette, sliced and toasted

directions

  1. Heat oven to 400ºF. Place brie in the center of a cast iron pan. Top with tomatoes.
  2. Drizzle with olive oil and garlic. Bake in the oven for 5-7 minutes, or until the tomatoes are toasted and soft and the brie becomes a light, seared brown.
  3. Remove from oven. Top with balsamic and basil. Serve with baguette slices, and enjoy!
