Tips for Buying Shrimp

  • Buy shrimp in the frozen section of your grocery store or at the seafood counter.
If you buy from the seafood counter, look for raw shrimp that is deveined and already peeled (with tails on or off – your choice).
  • For frozen shrimp, look for frozen jumbo shrimp that is peeled and deveined. About 30 minutes before you plan to cook, place the frozen shrimp in a colander and run the shrimp under cold water to quickly defrost.

What type of lettuce works best for wraps?

  • Butter lettuce (aka bibb lettuce or Boston bibb lettuce) and Romaine leaves are perfect options for wraps. If you don’t have either of these, any large lettuce leaves will work.

How to make creamy shrimp wraps

  1. In a large bowl, whisk together the mayonnaise, sesame oil, honey, cilantro and lime juice. Set aside.
  2. In a large skillet over medium-high, heat oil.
  3. Pat the shrimp dry and toss with cornstarch until lightly coated. Salt and pepper to taste.
  4. Cook the shrimp in hot oil until cooked through and lightly golden brown.
  5. Remove from heat and immediately toss in mayonnaise mixture.
  6. Serve on lettuce wraps and enjoy!

Recipe Tips

  • Sneak some nutritious extras into the wrap like coleslaw mix, shredded carrots or mango cubes.
  • To make the lettuce wraps from a whole head of lettuce, trim and discard any tough or moldy outer lettuce leaves. Carefully cut the core from the head of the lettuce. Run cold water over the head of lettuce, cut-core side up. Pat the head of lettuce with paper towels, make a stack of lettuce leaves, place the lettuce leaves in a resealable bag and refrigerate until ready to use.
  • Swap out the shrimp for diced chicken if desired.
  • Flour tortillas can be used in place of the lettuce.
